Obviously a magnetic tank bag won't work. What are you guys using? Tank bags, tail bags, etc? Maybe even soft enduro type saddle bags? I picked up an extra passenger seat and plan on drilling it to mount a Kriega US-5 but before I do I'm still looking for inspiration.

I don't use it much, but a tank bag strapped onto the tail works good. There are several sizes and designs, and I got a medium sized bag that only holds essentials like sun glasses, gloves and cold weather gear. Anything more goes in a backpack. Look on eBay for lightly usedbags and good deals.

The basic Ventura luggage solution starts with L-brackets for the EBR SX/RX and optional grab handle for a passenger.

The grab handle can be swapped for a useful rack:

The rack can be swapped for a taller rack which supports the 51 liter bike-pack which is shown to accommodate a passenger as follows:

Or if one wants to just run throw-over bags like Chase Harper Stealth, it's best to cap off the L-brackets with 3/4" plastic end caps from Home Depot for a finished look as follows:

And if one wants to add a tail bag to complement the Stealth bags, strap a Firebolt Tail Bag to the pillion seat.

But if one wants to carry a passenger and retain the saddle bags, swap the Firebolt Tail Bag for the grab handle.

So, if riding solo with full luggage capacity, try this setup. And if carrying a passenger, put the 51 liter bag facing backwards over the rack.

I've got a magnetic tank bag on mine. Works great, and when you remove the bag there is no hardware to show.

Then I used an inexpensive universal saddlebag bar setup...

...and used the same OGIO saddlebags that EBR was working on.

(a better angle, although worse lighting)

I'd be careful overloading the tail section with a large pack + passenger. I believe a certain EBR engineer warned against this due to the amount of the weight the subframe can hold.

What type of windscreen is that? I am currently looking for one that is clean & simple.

I very much like your pannier setup and have no desire for a tail bag. Did you incorporate the ventura L bracket kit to support the chase panniers in any way?
